Mint Cilantro Raita
Add twist to your regular onion, tomato, cucumber raita with mint cilantro sauce; simple and refreshing
Cilantro/ Coriander leaves: 1 cups (washed and cleaned)
Mint leaves: ½ cup (washed and cleaned)
Blanched skinless almonds: 10-15
Green Chili: 2
Greek Yogurt/Set Curd: 300 gm
Large Cucumber: ½ (peeled, cored and chopped finely)
Tomato: 1 (cored and chopped finely)
Onion: 1 (finely chopped)
Sugar: 1 tsp
Water: 2-3 tbsp
Salt to taste
1) Grind to a smooth paste cilantro, mint, green chili and almonds. Add 2-3 tbsp of water if desired.
2) Mix chopped onion, tomato, cucumber, yogurt, salt and sugar. Add 2-3 tbsp of cilantro mint sauce.
3) Transfer to a serving bowl. Allow 15-20 min for all the flavors to set perfectly and give the best results.
Grind almonds to a fine paste to get smooth consistency of raita
Substitute almonds with roasted skinless peanuts or cashews
Serve chilled with Rice, Vegetable Pilaf and Biryanis
