Honey Raisin Nut Pancake

A breakfast recipe when you need something tasty, sweet and easy to cook

Plain Flour: 1 cup

Baking Soda: ½ tsp

Cinnamon Powder: ¼ tsp

Powdered Sugar: 1 tbsp

Salt: a pinch

Cold Milk: ¾th cup

Whole Egg: 1

Honey: 4 tbsp

Butter: 1 tbsp

Chopped Raisins: 3 tbsp

Chopped Cashew nuts : 3 tbsp

Chopped Almonds: 3 tbsp

Oil: 5 tbsp

1) Sieve evenly a mixture of plain flour, baking soda, powdered sugar, cinnamon powder and salt. This forms the dry ingredient mix

2) Whisk the whole egg in a separate container till fluffy

3) Add milk and honey to it and whisk again

4) Heat Butter in a Fry Pan

5) Add the Chopped Nuts and after 30 seconds add chopped raisins

6) Remove the mixture from the heat when they turn golden

7) Transfer it in a bowl

8) Pour the Egg Milk Mixture to the Dry Ingredient Mix at 1) and mix it well

Note: Avoid Formation of Lumps by stirring continuously

9) Add the nut mixture

10) Heat a non stick frying pan, spread evenly 1 tbsp of oil and spread gently one ladle of the batter

Note: Put the gas on low flame

11) Add oil to the sides of the pancake and check for color by slightly lifting the sides of the pancake

12) Flip when golden brown and cook on both the sides. Remove from heat and serve hot


Serve with Hot coffee or fresh cream
